Dr. Hanne Volpin is Co-founder and CTO of Celleste Bio, a company that develops a proprietary combination of Biotech, Agtech and AI to produce 100% natural cocoa ingredients at scale, anywhere in the world, without cutting down a single tree. Dr Volpin is an expert in plant biotechnology with over two decades of experience integrating biological research and computational tools for the benefit of the seed and food industry. Her work focuses on leveraging plants for sustainable industrial applications. She holds a Ph D in Plant Protection from the Hebrew University, and later transitioned to computational biology, applying bioinformatics and computational tools to decode plant genomes and optimize biosynthetic pathways. As CTO, Hanne is driving the development of a platform combining AI and biotechnology to develop scalable production methods of 100% natural cocoa butter and cocoa powder in cell suspension culture. Dr. Volpin serves on advisory boards, speaks at international conferences, and publishes extensively in the scientific literature.
